While our city ham is partially cooked by the smoking process, it must be heated prior to eating. Firsthand Foods' farmers raise their animals humanely outdoors without growth-promoting antibiotics, using non-GMO feed, and are Animal Welfare Approved. No nitrates added except those naturally occurring in sea salt and celery juice powder.
